Golumpki soup

Golumpki Soup is a comforting and hearty dish inspired by the traditional Polish stuffed cabbage rolls (Golumpki). Instead of wrapping the cabbage leaves around the filling, this soup simulates the same flavors in a bowl, making it a simpler and faster way to enjoy this classic dish.

Ingredients:

  • 1 lb ground beef (or a mix of ground beef and ground pork)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 medium head of cabbage, shredded (about 4-5 cups)
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 4 cups beef broth (or vegetable broth for a lighter version)
  • 1 cup cooked rice (white or brown)
  • 1 tbsp sugar (optional, to balance acidity)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 1/2 tsp dried thyme (optional)
  • 1/4 tsp crushed red pepper flakes (optional, for a slight kick)
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Cook the meat:
    • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef (and pork, if using) and cook until browned, breaking it up into small pieces as it cooks. Drain any excess fat.
  2. Add vegetables:
    • Add the chopped onion and minced garlic to the pot with the browned meat. Cook for 3-4 minutes, until the onion becomes translucent.
  3. Add cabbage and liquids:
    • Stir in the shredded cabbage and cook for about 5 minutes until it starts to soften. Then add the diced tomatoes (with juice), tomato sauce, beef broth, and sugar (if using). Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the cabbage is tender.
  4. Season the soup:
    • Stir in the cooked rice, salt, black pepper, paprika, thyme, and red pepper flakes (if using). Taste the soup and adjust seasonings as needed, adding more salt or pepper if desired.
  5. Simmer:
    • Let the soup simmer for another 10-15 minutes, allowing the flavors to meld together. If the soup is too thick, add a bit more broth or water to reach your desired consistency.
  6. Serve:
    • Ladle the Golumpki soup into bowls and garnish with fresh parsley. Serve with crusty bread on the side for a filling meal.
