Graham Cracker Logs 🪵🍫

A no-bake, retro dessert with layers of graham crackers, creamy filling, and chocolate—like a cross between icebox cake and s’mores! Perfect for holidays or easy entertaining.


🍽️ Ingredients (Makes 2 logs)

For the Filling:

  • 1 (8 oz) package cream cheese, softened

  • ½ cup (1 stick / 113g) unsalted butter, softened

  • 1 cup (120g) powdered sugar

  • 1 tsp vanilla extract

  • 1 cup mini marshmallows

For Assembly:

  • 14 whole graham crackers (about 1 sleeve)

  • 1 cup semi-sweet chocolate chips

  • ½ cup chopped nuts (pecans, walnuts, or almonds – optional)


👩🍳 Instructions

  1. Make the Filling:

    • Beat cream cheese and butter until smooth.

    • Mix in powdered sugar and vanilla. Fold in marshmallows.

  2. Assemble the Logs:

    • Spread 1 heaping tbsp filling onto each graham cracker.

    • Stack 7 crackers vertically, pressing gently to form a log. Repeat for the second log.

    • Frost the outside with remaining filling.

  3. Chill & Coat:

    • Freeze logs 1 hour (or fridge for 2 hours) until firm.

    • Melt chocolate chips, then spread over chilled logs. Sprinkle with nuts.

    • Chill 15 mins to set chocolate.

  4. Serve:

    • Slice diagonally into 1-inch pieces.
