Savory Peanut Beef Ramen 🍜🥜

This quick, flavor-packed ramen upgrades instant noodles with a rich peanut sauce, savory ground beef, and crisp veggies—ready in 20 minutes!

Ingredients (Serves 2)

  • 2 packs instant ramen (discard seasoning packets or use half)

  • ½ lb ground beef (or turkey/chicken)

  • 1 red bell pepper, thinly sliced

  • 2 cloves garlic, minced

  • 1 tbsp ginger, grated

  • 2 green onions, sliced (whites + greens separated)

  • 1 tbsp sesame oil (or vegetable oil)

  • 1 tbsp sriracha (adjust to taste)

  • Lime wedges, cilantro, and crushed peanuts for garnish

Peanut Sauce:

  • 3 tbsp peanut butter (creamy or crunchy)

  • 2 tbsp soy sauce

  • 1 tbsp honey (or brown sugar)

  • 1 tbsp rice vinegar

  • ½ cup warm water (to thin)

Instructions

  1. Cook ramen according to package (discard seasoning). Drain and set aside.

  2. Brown beef: Heat sesame oil in a pan over medium-high. Add beef, garlic, ginger, and white parts of green onions. Cook until beef is crispy (5-6 mins).

  3. Add veggies: Toss in bell pepper; stir-fry 2-3 mins until slightly soft.

  4. Make sauce: Whisk peanut butter, soy sauce, honey, vinegar, and water until smooth. Pour into pan with beef and stir to coat.

  5. Combine: Add cooked ramen and sriracha; toss everything together.

  6. Garnish with green onions, cilantro, peanuts, and a squeeze of lime.
