Greek Chicken Gyros

Here’s a tasty recipe for Greek chicken gyros that you can easily make at home!

Ingredients:

For the Chicken Marinade:

  • 1 lb (450 g) boneless, skinless chicken thighs or breasts
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and excess water squeezed out
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper to taste
  • Fresh dill (optional)

For Assembling:

  • Pita bread or flatbreads
  • Sliced tomatoes
  • Sliced red onion
  • Fresh parsley or lettuce

Instructions:

1. Marinate the Chicken:

  • In a bowl, mix together olive oil, red wine vinegar, garlic, oregano, paprika, salt, and pepper.
  • Add the chicken, making sure it’s well coated. Cover and marinate in the refrigerator for at least 1 hour (or overnight for more flavor).

2. Prepare the Tzatziki Sauce:

  • In a bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, red wine vinegar, salt, and pepper. Mix well. Add fresh dill if desired. Refrigerate until ready to use.

3. Cook the Chicken:

  • Preheat your grill or skillet over medium-high heat.
  • Remove chicken from the marinade and cook for about 6-7 minutes on each side, or until fully cooked and juices run clear. Let it rest for a few minutes before slicing.

4. Assemble the Gyros:

  • Warm the pita bread or flatbreads.
  • Layer the sliced chicken, tzatziki sauce, tomatoes, red onion, and parsley or lettuce in the pita.

These gyros are delicious and perfect for a casual meal. You can also add other toppings like feta cheese or olives if you like!
