Greek Chicken Meatballs

Ingredients (Makes ~20 meatballs)

  • 1 lb (450g) ground chicken (or turkey)

  • ¼ cup breadcrumbs (or almond flour for low-carb)

  • ¼ cup grated Parmesan cheese

  • ¼ cup fresh parsley, finely chopped

  • 1 garlic clove, minced

  • 1 egg

  • 1 tsp dried oregano

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika (optional)

  • 1 tbsp olive oil (for cooking)

Instructions

  1. Mix ingredients: In a bowl, combine ground chicken, breadcrumbs, Parmesan, parsley, garlic, egg, oregano, salt, pepper, and paprika. Mix gently (don’t overwork).

  2. Form meatballs: Roll into 1-inch balls (~20g each).

  3. Cook:

    • Skillet method: Heat olive oil in a pan over medium heat. Cook meatballs for 8-10 min, turning until golden and cooked through (165°F internal temp).

    • Oven method: Bake at 400°F (200°C) for 15-20 min on a parchment-lined tray.

  4. Serve with tzatziki (recipe below) and warm pita, salad, or rice.


Homemade Tzatziki Sauce

Ingredients

  • 1 cup Greek yogurt (full-fat for creaminess)

  • ½ cup cucumber, grated & drained (squeeze out excess water)

  • 1 tbsp lemon juice

  • 1 garlic clove, minced

  • 1 tbsp fresh dill, chopped (or 1 tsp dried)

  • 1 tbsp olive oil

  • ½ tsp salt

  • ¼ tsp black pepper

Instructions

  1. Drain cucumber: Grate cucumber, wrap in a towel, and squeeze out liquid.

  2. Mix: Combine yogurt, cucumber, lemon juice, garlic, dill, olive oil, salt, and pepper. Chill for 30+ min before serving.


Serving Suggestions

  • As an appetizer: Skewer meatballs with toothpicks and serve with tzatziki for dipping.

  • Meal prep: Pair with Greek salad, roasted veggies, or quinoa.

  • Pita wrap: Stuff meatballs, tzatziki, tomatoes, and red onions into warm pita bread.
