Greek Lemon Chicken and Potatoes Recipe

Ingredients:

  • 4 bone-in, skin-on chicken thighs (or breasts)
  • 4 medium potatoes, cut into wedges
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • Zest of 1 lemon
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon slices (for garnish, optional)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 425°F (220°C).

2. Prepare the Marinade:

  • In a large bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.

3. Marinate the Chicken:

  • Add the chicken thighs to the marinade, making sure they are well coated. Allow them to marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

4. Arrange in a Baking Dish:

  • In a large baking dish, arrange the potato wedges. Drizzle with a little olive oil, salt, and pepper. Toss to coat.
  • Place the marinated chicken thighs on top of the potatoes, skin-side up.

5. Bake:

  • Bake in the preheated oven for about 40-45 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the potatoes are tender and golden.

6. Serve:

  • Garnish with chopped parsley and lemon slices if desired. Serve warm, with a side of Greek salad or tzatziki for a complete meal.
