Grilled Cheese Burrito

The Grilled Cheese Burrito is a delicious mashup of a classic burrito and a gooey grilled cheese sandwich—think crispy, cheesy exterior with a flavorful, hearty filling inside.

Grilled Cheese Burrito (Inspired by Taco Bell’s Version)

Ingredients:

For the Filling:

  • ½ lb ground beef (or chicken/beans for vegetarian)

  • 1 packet taco seasoning (or DIY: 1 tsp cumin, 1 tsp chili powder, ½ tsp paprika, ½ tsp garlic powder, ¼ tsp oregano, salt & pepper)

  • ½ cup cooked Mexican rice (or cilantro lime rice)

  • ½ cup refried beans (or black beans)

  • ¼ cup diced tomatoes

  • ¼ cup shredded lettuce

  • ½ cup shredded cheddar or Mexican blend cheese

  • 2 tbsp sour cream (optional)

  • 1 tbsp hot sauce (optional)

For the Grilled Cheese Exterior:

  • 2 large flour tortillas (burrito-size)

  • 1 cup shredded mozzarella or cheddar cheese (for melting on the outside)

  • 1 tbsp butter (for grilling)


Instructions:

1. Prepare the Filling:

  1. Cook the ground beef in a skillet over medium heat until browned. Drain excess fat.

  2. Add taco seasoning + a splash of water, simmer for 2-3 mins. Set aside.

  3. Warm the refried beans and rice (if not already hot).

2. Assemble the Burrito:

  1. Layer the tortilla:

    • Spread a thin layer of refried beans in the center.

    • Add seasoned beef, rice, tomatoes, lettuce, shredded cheese, sour cream, and hot sauce.

  2. Fold tightly:

    • Fold the sides inward, then roll from the bottom up, sealing the filling inside.

3. Grill with Cheese:

  1. Heat a non-stick skillet or griddle over medium-low heat.

  2. Sprinkle half the mozzarella/cheddar in a line on the skillet (same length as your burrito).

  3. Place the burrito seam-side down onto the melting cheese.

  4. Sprinkle the remaining cheese on top of the burrito.

  5. Cook for 2-3 mins until the bottom cheese is crispy and golden.

  6. Carefully flip the burrito using a spatula, grill the other side for another 2-3 mins until cheese is crispy.

4. Serve:

  • Let cool for 1 min (cheese will be molten hot!).

  • Slice in half and serve with salsa, guacamole, or extra sour cream.


Tips for the Best Grilled Cheese Burrito:

🔥 Extra Crispy Cheese: Press the burrito lightly while grilling to help the cheese adhere.
🧀 Double Cheese: Add cheese inside and outside for maximum meltiness.
🌯 Overstuffing Warning: Don’t overfill, or the burrito will be hard to seal.
⚡ Shortcut: Use leftover rice, rotisserie chicken, or canned beans.
