Grilled Chicken Bites 🍗🔥

Juicy, flavorful, and perfect for dipping! These marinated chicken bites are great for appetizers, salads, or meal prep.


Ingredients (Serves 3-4)

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces

  • 2 tbsp olive oil

  • 2 tbsp soy sauce (or tamari for GF)

  • 1 tbsp honey (or maple syrup)

  • 1 tbsp Dijon mustard

  • 2 garlic cloves, minced

  • 1 tsp smoked paprika

  • Salt & pepper to taste

  • Fresh parsley, chopped (for garnish)

For Serving (Optional)

  • Lemon wedges

  • Ranch or yogurt dip

  • Skewers (for fun presentation!)


Instructions

  1. Marinate:

    • In a bowl, whisk together olive oil, soy sauce, honey, Dijon, garlic, smoked paprika, salt, and pepper.

    • Add chicken pieces, tossing to coat. Cover and refrigerate for at least 30 mins (or up to 4 hours).

  2. Grill:

    • Heat a grill pan or outdoor grill to medium-high.

    • Thread chicken onto skewers (if using) or cook loose.

    • Grill for 3-4 mins per side, until charred and internal temp reaches 165°F.

  3. Serve:

    • Garnish with parsley and a squeeze of lemon.

    • Pair with your favorite dip or toss into salads/wraps.


Tips & Variations

🔥 Spicy Kick – Add ½ tsp cayenne or chili flakes to the marinade.
🍯 Sticky Glaze – Brush with extra honey in the last 2 mins of grilling.
🍋 Zesty Twist – Replace Dijon with lemon juice + 1 tsp oregano.
