🔥 Grilled Chicken Fajita Salad with Avocado (High-Protein & Flavor-Packed!)

This smoky, zesty grilled chicken fajita salad combines juicy spiced chicken, charred peppers, creamy avocado, and a tangy lime dressing for a healthy, satisfying meal that’s perfect for lunch or dinner.

🥗 Ingredients

For the Chicken & Fajita Veggies:

  • 2 boneless, skinless chicken breasts (or thighs)

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 red onion, sliced

  • 2 tbsp olive oil, divided

  • 1½ tsp chili powder

  • 1 tsp cumin

  • 1 tsp smoked paprika

  • ½ tsp garlic powder

  • ½ tsp salt

  • ½ lime, juiced

For the Salad Base:

  • 5 cups chopped romaine or mixed greens

  • 1 avocado, sliced

  • ½ cup cherry tomatoes, halved

  • ¼ cup fresh cilantro, chopped

  • ¼ cup shredded cheese (cotija, cheddar, or feta)

  • Optional: black beans, corn, or jalapeños

For the Lime-Cilantro Dressing:

  • 3 tbsp olive oil

  • 2 tbsp lime juice

  • 1 tbsp honey or agave

  • 1 tsp Dijon mustard

  • 1 garlic clove, minced

  • 2 tbsp fresh cilantro, chopped

  • Salt & pepper to taste


🔥 Instructions

1️⃣ Marinate & Grill the Chicken

  1. In a bowl, mix 1 tbsp olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and lime juice. Coat chicken evenly and let sit 10+ mins.

  2. Grill chicken on medium-high heat 6-8 mins per side until 165°F internal temp. Rest, then slice.

2️⃣ Char the Fajita Veggies

  1. Toss peppers and onion with 1 tbsp olive oil, salt, and a pinch of cumin.

  2. Grill or sauté in a skillet 5-7 mins until slightly charred.

3️⃣ Assemble the Salad

  1. Layer greens, grilled chicken, peppers, onion, avocado, tomatoes, and cheese.

  2. Drizzle with lime-cilantro dressing and garnish with cilantro.

4️⃣ Make the Dressing

Whisk all dressing ingredients until smooth. Adjust salt/honey to taste.
