Grilled Herb & Garlic Shrimp

Ingredients:
- 1 lb (450g) large shrimp, peeled & deveined (tails on or off)
- 3 tbsp olive oil
- 4 garlic cloves, minced
- 1 tbsp fresh lemon juice (+ zest of ½ lemon)
- 1 tsp honey (or maple syrup)
- 1 tsp smoked paprika (or regular paprika)
- 1 tsp dried oregano (or 1 tbsp fresh, chopped)
- ½ tsp red pepper flakes (adjust to taste)
- Salt & black pepper, to taste
- 2 tbsp fresh parsley, chopped
- Lemon wedges, for serving
Instructions:
1️⃣ Marinate the Shrimp:
- In a bowl, whisk together olive oil, garlic, lemon juice & zest, honey, paprika, oregano, red pepper flakes, salt, and pepper.
- Add shrimp and toss to coat. Cover and refrigerate for 15-30 mins (or up to 1 hour for deeper flavor).
2️⃣ Preheat Grill:
- Heat a grill or grill pan to medium-high (or use an outdoor grill). Lightly oil the grates to prevent sticking.
3️⃣ Grill the Shrimp:
- Thread shrimp onto skewers (if using wooden ones, soak in water for 10 mins first).
- Grill for 2-3 mins per side until shrimp turn pink and slightly charred.
4️⃣ Serve:
- Garnish with fresh parsley and serve with lemon wedges.
