Grilled Mozzarella BBQ Chicken Sandwiches

Juicy grilled chicken smothered in BBQ sauce, topped with melted mozzarella, and served on toasted buns—perfect for summer cookouts or a hearty weeknight meal!


INGREDIENTS

  • 2 boneless, skinless chicken breasts (halved lengthwise to make 4 thin cutlets)

  • ½ cup BBQ sauce (plus extra for serving)

  • 4 slices mozzarella cheese (or 1 cup shredded)

  • 4 brioche or ciabatta buns (toasted)

  • 2 tbsp olive oil (for grilling)

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • Salt & pepper to taste

  • Optional toppings:

    • Sliced red onion, pickles, avocado, or coleslaw


INSTRUCTIONS

1. Prep the Chicken:

  • Pound chicken breasts to ½-inch thickness (or halve them lengthwise for even cooking).

  • Season with garlic powder, smoked paprika, salt, and pepper.

2. Grill the Chicken:

  • Heat grill or skillet to medium-high and brush with olive oil.

  • Grill chicken for 4-5 minutes per side until internal temp reaches 165°F (74°C).

  • During the last minute, brush generously with BBQ sauce and top with mozzarella. Cover to melt cheese.

3. Toast the Buns:

  • Lightly butter buns and grill until golden (or toast in a pan).

4. Assemble Sandwiches:

  • Spread extra BBQ sauce on buns, then layer with chicken, cheese, and toppings like red onion or coleslaw.

5. Serve Immediately!
