Grilled Shrimp Bowl with Avocado

Ingredients:

  • 1 lb shrimp (peeled and deveined)
  • 1 tbsp olive oil

  • 1 tsp smoked paprika
  • ½ tsp cumin
  • ½ tsp chili powder
  • Salt and pepper to taste
  • 2 ripe avocados, sliced
  • 1 cup cooked quinoa or rice (optional, for a base)
  • 1 cup cherry tomatoes, halved (optional)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions:

  1. Prepare the shrimp:

    • In a medium bowl, combine the olive oil, garlic powder, smoked paprika, cumin, chili powder, salt, and pepper. Stir until well mixed.
    • Add the shrimp to the bowl and toss to coat evenly with the seasoning mixture. Let the shrimp marinate for about 10-15 minutes (you can also marinate it for longer in the fridge for more flavor).
  2. Grill the shrimp:

    • Preheat your grill or grill pan over medium-high heat.
