Here’s a simple yet delicious recipe for Grilled Shrimp with Lemon-Herb Aioli:

Ingredients

For the Shrimp:

  • 1 lb (450 g) large shrimp, peeled and deveined (tails on, optional)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • Juice of ½ a lemon
  • Skewers (soaked in water if wooden)

For the Lemon-Herb Aioli:

  • ½ cup mayonnaise
  • 1 garlic clove, finely minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, finely chopped
  • 1 tsp fresh dill, finely chopped (optional)
  • Salt and pepper, to taste

Instructions

Prepare the Shrimp:

  1. In a large bowl, combine olive oil, garlic powder, smoked paprika, salt, pepper, and lemon juice.
  2. Add the shrimp and toss to coat. Let marinate for 15–20 minutes.

Make the Lemon-Herb Aioli:

  1. In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, lemon zest, parsley, and dill (if using). Season with salt and pepper to taste.
  2. Cover and refrigerate until ready to serve.

Grill the Shrimp:

  1. Preheat your grill or grill pan to medium-high heat.
  2. Thread the shrimp onto skewers, leaving a small gap between each piece.
  3. Grill the shrimp for 2–3 minutes per side, or until they turn pink and are slightly charred.

Serve:

  1. Arrange the shrimp on a platter and serve with the Lemon-Herb Aioli on the side for dipping.
  2. Garnish with extra parsley and lemon wedges if desired.

This dish pairs well with a crisp salad or some grilled vegetables. Enjoy!
