Ham and White Beans

Ingredients:

  • 1 lb (450g) dried white beans (such as Great Northern or Navy beans)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2-3 cloves garlic, minced
  • 2 cups diced cooked ham
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions:

  1. Prepare the Beans:
    • Rinse and sort the dried beans. Soak them overnight in water, or use the quick soak method (bring to a boil for 2 minutes, then let sit for 1 hour). Drain and rinse.
  2. Sauté Aromatics:
    • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute.
  3. Add Ingredients:
    • Add the soaked beans, diced ham, chicken broth, thyme, smoked paprika, bay leaf, salt, and pepper to the pot. Stir to combine.
  4. Cook:
    • Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more broth or water if needed to keep the beans covered.
  5. Final Adjustments:
    • Once the beans are tender, taste and adjust seasoning with more salt and pepper if necessary. Remove the bay leaf before serving.
  6. Serve:
    • Ladle the ham and white beans into bowls, and garnish with chopped parsley if desired.

Tips:

  • Slow Cooker Option: You can also make this in a slow cooker. After sautéing the onion and garlic, transfer everything to the slow cooker and cook on low for 6-8 hours.
  • Add Vegetables: Feel free to add diced carrots or celery for extra flavor and nutrition.
