Hawaiian Cinnamon Rolls

Ingredients

  • For the dough:
    • 4 cups (500g) all-purpose flour
    • 1/4 cup (50g) granulated sugar
    • 1 packet (7g) active dry yeast
    • 1/2 tsp salt
    • 1 cup (240ml) warm pineapple juice (about 110°F/43°C)
    • 1/4 cup (60g) unsalted butter, melted
    • 1 large egg
  • For the filling:
    • 1/2 cup (100g) brown sugar
    • 1 tbsp ground cinnamon
    • 1/4 cup (60g) unsalted butter, softened
    • 1/2 cup crushed pineapple, drained
    • 1/2 cup shredded coconut (optional)
  • For the glaze:
    • 1 cup (120g) powdered sugar
    • 2-3 tbsp pineapple juice
    • 1/2 tsp vanilla extract

Instructions

  1. Prepare the dough:
    • In a large mixing bowl, combine 2 cups of flour, sugar, yeast, and salt.
    • Add the warm pineapple juice, melted butter, and egg. Mix until smooth.
    • Gradually add the remaining flour, 1/2 cup at a time, until a soft dough forms.
    • Knead the dough on a floured surface for 5-7 minutes, or until smooth and elastic.
    • Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  2. Prepare the filling:
    • In a small bowl, mix the brown sugar and cinnamon. Set aside.
    • In another bowl, combine the softened butter, crushed pineapple, and shredded coconut (if using).
  3. Shape the rolls:
    • Punch down the dough and roll it out on a floured surface into a large rectangle (about 12×18 inches).
    • Spread the pineapple mixture evenly over the dough, leaving a 1-inch border around the edges.
    • Sprinkle the cinnamon-sugar mixture over the pineapple layer.
    • Roll the dough tightly into a log, starting from the long side. Pinch the seam to seal.
    • Cut the log into 12 equal slices and place them in a greased 9×13-inch baking dish.
  4. Let the dough rise again:
    • Cover the rolls with a clean towel and let them rise for another 30 minutes.
  5. Bake:
    • Preheat the oven to 375°F (190°C).
    • Bake the rolls for 20-25 minutes, or until golden brown.
  6. Make the glaze:
    • In a small bowl, whisk together the powdered sugar, pineapple juice, and vanilla extract until smooth.
  7. Finish and serve:
    • Drizzle the glaze over the warm cinnamon rolls.
    • Serve warm and enjoy!

Tips

  • Add-ins: Add chopped macadamia nuts or a sprinkle of coconut sugar for extra flavor.
  • Make ahead: Prepare the dough the night before and let it rise in the fridge overnight. Shape and bake the next day.
  • Storage: Store leftovers in an airtight container at room temperature for up to 2 days.
