Healthy Chocolate Banana Oats Cake

Ingredients:

  • 120 g rolled oats (1 ¼ cups)
  • 250 ml hot milk or plant-based milk (1 cup)
  • 2 ripe bananas (200 g without peel)
  • 2 eggs
  • A pinch of salt
  • 30 g unsweetened cocoa powder (4 tbsp)
  • 5 g baking powder (1 tsp)
  • Optional: Nuts for decoration (e.g., walnuts, almonds)

Instructions:

  1. Prepare the oats:
    • Place the rolled oats in a blender or food processor and blend until you get a fine flour-like consistency.
  2. Mix the wet ingredients:
    • In a large bowl, mash the bananas until smooth.
    • Add the eggs and whisk until well combined.
  3. Combine dry and wet ingredients:
    • Add the oat flour, cocoa powder, baking powder, and a pinch of salt to the banana mixture. Mix well.
    • Gradually pour in the hot milk while stirring until you get a smooth batter.
  4. Bake the cake:
    • Preheat a non-stick pan or skillet over medium heat.
    • Pour the batter into the pan and spread it evenly.
    • Cover with a lid and cook for about 5 minutes on low-medium heat, or until the edges are set and the top is no longer wet.
    • Carefully flip the cake and cook for another 2-3 minutes on the other side.
  5. Serve:
    • Transfer the cake to a plate and let it cool slightly.
    • Decorate with nuts or sliced bananas if desired.
    • Slice and enjoy warm or at room temperature!

  • For a vegan version, replace the eggs with flax eggs (2 tbsp ground flaxseed + 6 tbsp water, let sit for 5 minutes).
