Healthy Pecan Greek Yogurt Banana Bread Muffins 🍌🥜

Moist, protein-packed muffins sweetened naturally with ripe bananas and studded with crunchy pecans—perfect for breakfast or a guilt-free snack!


🍽️ Ingredients (Makes 12 muffins)

Dry Ingredients:

  • 1 ½ cups (180g) whole wheat flour (or all-purpose/GF blend)

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp cinnamon

  • ¼ tsp salt

Wet Ingredients:

  • 3 ripe bananas, mashed (~1 ½ cups)

  • ½ cup (120g) plain Greek yogurt (unsweetened)

  • ¼ cup (60ml) honey or maple syrup

  • 1 large egg, room temp

  • 1 tsp vanilla extract

  • 2 tbsp melted coconut oil (or olive oil)

Mix-Ins:

  • ½ cup (60g) chopped pecans (plus extra for topping)

  • Optional: 2 tbsp chia seeds or flaxseeds


👩🍳 Instructions

  1. Prep:

    • Preheat oven to 350°F (175°C). Line a muffin tin with liners or grease lightly.

  2. Mix Dry Ingredients:

    • In a bowl, whisk flour, baking soda, baking powder, cinnamon, and salt.

  3. Combine Wet Ingredients:

    • In another bowl, mix mashed bananas, Greek yogurt, honey, egg, vanilla, and oil until smooth.

  4. Bake:

    • Fold wet ingredients into dry until just combined (don’t overmix). Gently stir in pecans.

    • Divide batter into muffin cups (fill ¾ full). Top with extra pecans.

    • Bake 18-22 mins until a toothpick comes out clean.

  5. Cool & Serve:

    • Let cool in the pan for 5 mins, then transfer to a wire rack.
