Ingredients:

For the Soup:

  • 1 lb (450g) Italian sausage (mild or spicy, casings removed)

  • 1 tbsp olive oil

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 2 medium zucchinis, diced (~3 cups)

  • 1 carrot, diced (optional, for sweetness)

  • 1 (28 oz) can crushed tomatoes (or diced tomatoes)

  • 4 cups chicken broth (or vegetable broth)

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • ½ tsp red pepper flakes (optional, for heat)

  • Salt & black pepper to taste

For Serving (Optional):

  • Fresh basil or parsley, chopped

  • Grated Parmesan cheese

  • Crusty bread or garlic toast

Instructions:

  1. Brown the Sausage:

    • In a large pot or Dutch oven, heat olive oil over medium heat.

    • Add sausage, breaking it into crumbles with a spoon. Cook until browned (~5-7 mins). Remove with a slotted spoon, leaving drippings in the pot.

  2. Sauté Aromatics & Veggies:

    • In the same pot, sauté onion and garlic until fragrant (~2 mins).

    • Add zucchini (and carrot if using), cooking for 3-4 mins until slightly softened.

  3. Simmer the Soup:

    • Return sausage to the pot. Stir in crushed tomatoes, broth, oregano, basil, red pepper flakes, salt, and pepper.

    • Bring to a boil, then reduce heat and simmer for 15-20 mins (until veggies are tender).

  4. Adjust & Serve:

    • Taste and adjust seasoning (add more broth if too thick).

    • Ladle into bowls and top with fresh basil, Parmesan, and a drizzle of olive oil.

Variations:

  • Creamy Version: Stir in ½ cup heavy cream or coconut milk at the end.

  • Beans: Add white beans or chickpeas for extra protein.

  • Greens: Toss in spinach or kale in the last 5 mins.
