Whipped Cherry Pie

Ingredients:

For the Crust:

  • 1 pre-made graham cracker crust (or traditional pie crust)

For the Cherry Filling:

  • 1 can (21 oz) cherry pie filling (or 2 cups fresh or frozen cherries)
  • 1 tablespoon cornstarch (if using fresh or frozen cherries)
  • 1 tablespoon lemon juice (if using fresh cherries)

For the Whipped Cream Filling:

  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened

Instructions:

  1. Prepare the Crust: If using a traditional pie crust, bake according to package instructions and let it cool completely. If using a graham cracker crust, no baking is needed.
  2. Make the Cherry Filling:
    • If using canned cherries, simply set aside. If using fresh or frozen cherries, combine them in a saucepan with cornstarch and lemon juice. Cook over medium heat until the mixture thickens (about 5-10 minutes). Let it cool.
  3. Make the Whipped Cream Filling:
    • In a mixing bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until combined.
    • In a separate bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until smooth and combined.
  4. Assemble the Pie:
    • Spread the whipped cream filling evenly over the crust.
    • Spoon the cherry filling on top of the whipped cream layer.
  5. Chill: Cover the pie and refrigerate for at least 2 hours (or overnight) to set.
  6. Serve: Slice and enjoy your whipped cherry pie! You can garnish with additional whipped cream or fresh cherries if desired.
