Heavenly Cherry Pistachio Cream Bars

Ingredients:

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, chilled and diced
  • 1/4 cup powdered sugar
  • 1/2 cup chopped pistachios

For the Cream Cheese Layer:

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1/4 cup sour cream

For the Cherry Topping:

  • 1 cup cherry pie filling (or fresh cherries, chopped and lightly sweetened)
  • Optional: extra chopped pistachios for garnish

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch square baking dish with parchment paper.

2. Prepare the Crust:

  • In a food processor or a large mixing bowl, combine the flour, cold butter, powdered sugar, and chopped pistachios. Pulse or mix until the mixture resembles coarse crumbs.
  • Press the mixture into the bottom of the prepared baking dish to form an even crust layer.
  • Bake the crust for about 12-15 minutes, or until it is lightly golden brown. Remove from the oven and let it cool while you prepare the cream cheese layer.

3. Make the Cream Cheese Layer:

  • In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy.
  • Add the vanilla extract, egg, and sour cream, and beat until fully incorporated.
  • Pour the cream cheese mixture over the cooled pistachio crust.

4. Bake the Bars:

  • Return the pan to the oven and bake for an additional 25-30 minutes, or until the cream cheese layer is set and lightly golden on top. The center should no longer jiggle.
  • Allow the bars to cool to room temperature, then refrigerate for at least 2 hours or until fully chilled.

5. Add the Cherry Topping:

  • Once the bars are chilled, spread the cherry pie filling evenly over the top of the cream cheese layer. If using fresh cherries, spoon the sweetened cherries over the bars.
  • Optionally, garnish with extra chopped pistachios for a bit of crunch and flavor contrast.
