Heavenly White Snack Cake Recipe

Ingredients:

For the Cake:

  • 1 ½ cups (190g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large egg whites
  • 1 teaspoon vanilla extract
  • ½ cup (120ml) milk

For the Glaze (Optional):

  • 1 cup (120g) powdered sugar
  • 2-3 tablespoons milk or cream
  • ½ teaspoon vanilla extract

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Grease an 8×8-inch or 9×9-inch baking pan and line it with parchment paper for easy removal.
  2. Mix the dry ingredients:
    • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream the butter and sugar:
    • In a large bowl, beat the softened butter and sugar together until light and fluffy. Add the egg whites one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Combine wet and dry ingredients:
    • Gradually add the dry ingredients to the butter mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined.
  5. Bake:
    • Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool:
    • Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  7. Make the glaze (optional):
    • In a small bowl, whisk together the powdered sugar, milk (or cream), and vanilla extract until smooth. Drizzle the glaze over the cooled cake.
  8. Serve:
    • Slice and serve the cake as is, or with fresh berries, whipped cream, or a dusting of powdered sugar.

Tips:

  • Add citrus zest: Stir in the zest of a lemon or orange for a bright, citrusy flavor.
  • Make it festive: Top with sprinkles or edible flowers for a special occasion.
