High Protein Pistachio Ice Cream

Ingredients:

  • 1 cup raw pistachios (unsalted, shelled)
  • 1 cup Greek yogurt (plain, high-protein variety)
  • 1 scoop vanilla protein powder (whey or plant-based)
  • 1 cup unsweetened almond milk (or any milk of choice)
  • Optional: 1-2 tbsp sweetener (such as honey, maple syrup, or stevia) depending on your sweetness preference
  • Optional: 1 tsp vanilla extract (for extra flavor)

Instructions:

  1. Prepare the pistachios:

    • Place the pistachios in a food processor or blender and pulse until they are finely chopped, but not completely powdered. You want some texture in the ice cream, so don’t over-process them.
  2. Blend the ingredients:

    • In a blender or food processor, combine the chopped pistachios, Greek yogurt, protein powder, almond milk, and optional sweetener. Blend until smooth and well-combined.
  3. Taste and adjust:

    • Taste the mixture and adjust sweetness if needed by adding more sweetener or a splash of vanilla extract for extra flavor. Blend again to combine.
  4. Freeze:

    • Pour the mixture into a shallow, freezer-safe container. Spread it out evenly and cover with a lid or plastic wrap.
    • Freeze for at least 4-6 hours or until solid. You can also freeze it overnight for a firmer consistency.
  5. Serve:

    • Once the ice cream is frozen, remove it from the freezer and let it sit at room temperature for a few minutes before scooping, as it may be hard to scoop straight from the freezer.
    • Serve in bowls or cones, and enjoy the creamy, high-protein treat!

Tips:

  • Texture: If you prefer a smoother texture, you can process the mixture longer, or even use a stand-alone ice cream maker if you have one.
  • For a richer flavor: You can toast the pistachios lightly before blending to enhance their flavor. Just make sure to let them cool before blending.
  • Add-ins: You can mix in chocolate chips, chopped pistachios, or a swirl of honey just before freezing for extra texture and flavor.
