Homemade Keto Zucchini Crispy Chips

Ingredients:

  • 2 medium zucchini
  • 2 tablespoons olive oil (or avocado oil)

  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika (optional, for extra flavor)
  • Salt and black pepper, to taste
  • 1/4 cup grated Parmesan cheese (optional, for added flavor and crunch)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 225°F (110°C). This low heat will help the zucchini chips dry out and become crispy without burning.
  2. Prepare the Zucchini:

    • Wash and dry the zucchini.
    • Cut off the ends of the zucchini and slice them into thin rounds, about 1/8-inch thick. A mandoline slicer can help achieve uniform slices.
  3. Remove Excess Moisture:

    • Lay the zucchini slices on a paper towel and gently pat them dry to remove any excess moisture. This step helps to get them extra crispy.
  4. Season the Zucchini:

    • In a large bowl, toss the zucchini slices with olive oil, garlic powder, onion powder, paprika, salt, and black pepper. Make sure each slice is coated evenly.
  5. Arrange on a Baking Sheet:

    • Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
    • Arrange the zucchini slices in a single layer on the baking sheet. Avoid overlapping the slices to ensure even crispiness.
  6. Bake the Zucchini Chips:

    • Place the baking sheet in the preheated oven and bake for 1.5 to 2 hours, flipping the zucchini slices halfway through. Keep an eye on them to avoid burning.
    • Bake until the chips are golden and crispy.
  7. Optional: Add Parmesan:

    • If you’d like a cheesy flavor, sprinkle grated Parmesan cheese over the chips during the last 10 minutes of baking.
  8. Cool and Serve:

    • Let the chips cool completely on the baking sheet, as they’ll continue to crisp up as they cool.
