🍒🌰 Homemade Fruit Cake Recipe

Ingredients

Dry Ingredients:

  • 1½ cups (190g) all-purpose flour 🌾

  • ½ cup (100g) brown sugar (or coconut sugar) 🍯

  • 1 tsp baking powder 🥄

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ¼ tsp ground cloves (optional)

Wet Ingredients:

  • ½ cup (115g) melted butter (or coconut oil) 🧈

  • 2 large eggs, room temperature 🥚

  • ½ cup (120ml) orange juice (or apple juice) 🍊

  • 1 tsp vanilla extract (alcohol-free) 🌿

Mix-ins (Customizable!):

  • 1 cup dried fruits (raisins, chopped dates, cherries, apricots) �🍒

  • ½ cup chopped nuts (walnuts, pecans, or almonds) 🌰

  • Optional: 2 tbsp rum or brandy (for soaking fruits, adults only) 🥃


📝 Instructions

1. Prep Fruits & Nuts (Optional)

  • If using alcohol, soak dried fruits in 2 tbsp rum/brandy for 30+ mins (or use orange juice for a non-alcoholic version).

2. Make the Batter

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.

  2. In a bowl, whisk flour, sugar, baking powder, baking soda, salt, and spices.

  3. In another bowl, mix melted butter, eggs, orange juice, and vanilla.

  4. Combine wet & dry ingredients, then fold in dried fruits and nuts.

3. Bake

  • Pour batter into the pan and smooth the top.

  • Bake 50–60 mins until a toothpick comes out clean.

  • Cool in the pan for 10 mins, then transfer to a wire rack.

4. Optional Glaze (For Extra Shine!)

  • Mix 2 tbsp powdered sugar + 1 tbsp orange juice and drizzle over the cooled cake.


💡 Tips

✔ Storage: Wrap in foil and store at room temp for 3 days, or refrigerate for up to 1 week.
✔ Make it boozy: Brush baked cake with extra rum/brandy and age for richer flavor.
✔ No eggs? Substitute with ½ cup applesauce or 2 flax eggs.
