Homemade Tapioca Pudding

Ingredients:

  • 1/2 cup small pearl tapioca
  • 2 1/2 cups whole milk
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 2 large eggs, beaten
  • 1 tsp vanilla extract

Instructions:

  1. Soak the Tapioca:
    • In a medium bowl, soak the tapioca in 1 cup of cold water for about 30 minutes. Drain and set aside.
  2. Cook the Tapioca:
    • In a medium saucepan, combine the soaked tapioca, milk, sugar, and salt. Cook over medium heat, stirring constantly, until the mixture begins to thicken and the tapioca pearls become translucent (about 10-15 minutes).
  3. Add the Eggs:
    • In a separate bowl, beat the eggs. Slowly add a few spoonfuls of the hot tapioca mixture to the eggs, stirring constantly to temper them. This prevents the eggs from scrambling.
  4. Combine:
    • Pour the egg mixture back into the saucepan with the tapioca. Continue to cook, stirring frequently, for another 2-3 minutes until the pudding thickens further.
  5. Add Vanilla:
    • Remove the saucepan from heat and stir in the vanilla extract.
  6. Cool:
    • Transfer the pudding to a bowl or individual serving dishes. Let it cool at room temperature, then refrigerate for at least 2 hours before serving.
  7. Serve:
    • Serve chilled, and enjoy your homemade tapioca pudding! You can top it with whipped cream or fresh fruit if desired.

Tips:

  • For a richer flavor, you can substitute some of the milk with half-and-half.
  • If you prefer a smoother texture, blend the pudding with a hand mixer after it cools.
