Honey Peach Cream Cheese Cupcakes

Moist honey-kissed cupcakes with a velvety cream cheese swirl and juicy peach surprise in every bite!

INGREDIENTS

For the Cupcakes:

  • 1½ cups all-purpose flour

  • 1½ tsp baking powder

  • ¼ tsp salt

  • ½ cup unsalted butter, softened

  • 8 oz cream cheese, softened

  • ¾ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup honey

For the Peach Filling:

  • 1 cup diced fresh peaches (or canned, drained)

  • 1 tbsp honey

  • 1 tsp lemon juice

For the Honey Cream Cheese Frosting:

  • 8 oz cream cheese, softened

  • ¼ cup unsalted butter, softened

  • ¼ cup honey

  • 1 tsp vanilla extract


INSTRUCTIONS

1. Prep the Peach Filling:

  • Toss diced peaches with honey and lemon juice. Set aside to macerate while you prepare the batter.

2. Make the Cupcake Batter:

  1. Whisk together flour, baking powder, and salt in a bowl.

  2. In another bowl, beat butter, cream cheese, and sugar until fluffy (~3 mins).

  3. Add eggs one at a time, then mix in vanilla and honey.

  4. Gradually add dry ingredients, mixing just until combined.

3. Assemble & Bake:

  • Line a muffin tin with cupcake liners.

  • Fill each liner ⅔ full with batter.

  • Add 1 tsp peach filling to the center of each, then swirl lightly with a toothpick.

  • Bake at 350°F (175°C) for 18-22 minutes until a toothpick comes out clean. Cool completely.

4. Make the Frosting:

  • Beat cream cheese and butter until smooth. Add honey and vanilla, then whip until fluffy (~2 mins).

  • Pipe onto cooled cupcakes and garnish with fresh peach slices or a drizzle of honey.
