Honey Pepper Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon black pepper (adjust to taste)
  • 1 teaspoon garlic powder
  • Salt to taste
  • Chopped green onions (for garnish)

Instructions:

  1. Marinate the Chicken:
    • In a bowl, mix together honey, soy sauce, olive oil, black pepper, garlic powder, and a pinch of salt. Add the chicken breasts and coat well. Marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
  2. Cook the Chicken:
    • Preheat your oven to 375°F (190°C).
    • Heat a skillet over medium-high heat. Sear the marinated chicken for about 2-3 minutes on each side until golden brown.
    • Transfer the chicken to a baking dish and pour any remaining marinade over the top. Bake for about 20-25 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C).
  3. Garnish:
    • Let the chicken rest for a few minutes before slicing. Garnish with chopped green onions.

Creamy Macaroni Cheese

Ingredients:

  • 8 oz elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk (whole or 2%)
  • 2 cups shredded sharp cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Breadcrumbs for topping (optional)

Instructions:

  1. Cook the Macaroni:
    • Cook the macaroni according to package instructions until al dente. Drain and set aside.
  2. Make the Cheese Sauce:
    • In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until bubbly.
    • Gradually add the milk, whisking constantly to avoid lumps. Cook until the mixture thickens, about 5-7 minutes.
    • Stir in the cheddar cheese, garlic powder, onion powder, salt, and pepper until smooth. If using, add the Parmesan cheese as well.
  3. Combine:
    • Add the cooked macaroni to the cheese sauce and stir until well coated.
  4. Optional Topping:
    • If you like a crunchy topping, transfer the macaroni and cheese to a baking dish, sprinkle with breadcrumbs, and bake at 350°F (175°C) for 15-20 minutes until golden and bubbly.
