Honey Roasted Cauliflower with Grilled Halloumi & Crunchy Chickpeas

Ingredients:

For the Cauliflower:

  • 1 medium cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp curry powder
  • ½ tsp smoked paprika
  • ½ tsp turmeric
  • Salt and pepper to taste

For the Crunchy Chickpeas:

  • 1 can (400g) chickpeas, drained and rinsed
  • 1 tbsp olive oil
  • ½ tsp paprika
  • ½ tsp cumin
  • Pinch of salt

For the Grilled Halloumi:

  • 200g halloumi cheese, sliced into 1 cm thick pieces
  • 1 tsp olive oil

Toppings:

  • 2 tbsp sliced almonds, toasted
  • Fresh parsley, chopped

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C).
  2. Prepare the cauliflower: In a large bowl, toss the cauliflower florets with olive oil, honey, curry powder, smoked paprika, turmeric, salt, and pepper. Spread the cauliflower evenly on a baking sheet.
  3. Roast the cauliflower: Roast in the preheated oven for 20-25 minutes, flipping halfway through, until the cauliflower is tender and caramelized.
  4. Make the crunchy chickpeas: While the cauliflower is roasting, pat the chickpeas dry with a paper towel. Toss them with olive oil, paprika, cumin, and salt. Spread them on a separate baking sheet and roast in the oven for 15-20 minutes, shaking the pan occasionally, until crispy.
  5. Grill the halloumi: Heat a grill pan or skillet over medium heat. Brush the halloumi slices with olive oil and grill for 2-3 minutes on each side, until golden brown and slightly crispy.
  6. Toast the almonds: In a small pan, toast the sliced almonds over medium heat for 2-3 minutes, stirring frequently, until golden and fragrant. Be careful not to burn them.
  7. Assemble the dish: On a serving platter, arrange the roasted cauliflower, grilled halloumi, and crunchy chickpeas. Sprinkle with toasted almonds and fresh parsley.
  8. Serve: Enjoy this flavorful dish as a main course or a hearty side!

Tips:

  • For extra flavor, drizzle a little more honey over the dish before serving.
  • Add a squeeze of lemon juice for a fresh, tangy twist.
