Hungarian Haluski (Cabbage and Noodles)

🥬🍜 A comforting, budget-friendly dish with caramelized cabbage, buttery noodles, and a hint of sweetness!

This Central European classic is simple, hearty, and perfect for a quick weeknight meal. Here’s how to make it authentically Hungarian (with a few optional upgrades!).


🍽️ Ingredients (Serves 4)

  • 8 oz (225g) egg noodles (wide or dumpling-style)

  • ½ medium head green cabbage, thinly sliced (~4 cups)

  • 1 large onion, thinly sliced

  • 4 tbsp butter (or lard for authenticity)

  • 1 tsp sugar (helps caramelize the cabbage)

  • ½ tsp caraway seeds (optional, traditional flavor)

  • Salt & black pepper to taste

  • Sour cream or paprika for garnish (optional)


👩🍳 Instructions

1. Cook the Noodles

  • Boil noodles in salted water until al dente. Drain, rinse with cold water, and set aside.

2. Caramelize Cabbage & Onions

  • In a large skillet, melt butter over medium heat.

  • Add onions, cook 5 mins until soft.

  • Add cabbage, sugar, caraway seeds (if using), salt, and pepper.

  • Cook 15-20 mins, stirring occasionally, until golden and sweet.

3. Combine & Serve

  • Toss cooked noodles with the cabbage mixture.

  • Adjust seasoning (add more butter if dry).
