Hungarian Stuffed Cabbage Rolls (Töltött Káposzta)
A beloved Hungarian comfort dish, Töltött Káposzta features tender cabbage leaves stuffed with a flavorful meat-and-rice filling, simmered in a tangy tomato-and-sauerkraut broth. Often served with sour cream and fresh bread, it’s a staple at family gatherings.
Ingredients
For the Cabbage Rolls:

1 large head green cabbage (or savoy cabbage)

1 lb (450g) ground pork (or a mix of pork & beef)

½ cup uncooked white rice

1 small onion, finely chopped

2 garlic cloves, minced

1 egg
-
1 tsp salt

½ tsp black pepper
-
1 tsp sweet paprika (Hungarian if possible)

½ tsp dried marjoram
For the Cooking Broth:

2 cups sauerkraut (with some juice)

2 cups tomato sauce (or crushed tomatoes)

2 cups water or broth
-
1 tbsp sweet paprika
-
1 bay leaf
-
½ tsp caraway seeds (optional)

Salt & pepper to taste

2-3 slices bacon (optional, for richness)
To Serve:

Sour cream

Fresh parsley or dill, chopped

Crusty bread
Instructions
1. Prepare the Cabbage Leaves:

Bring a large pot of water to boil. Core the cabbage and place it whole in the boiling water. Simmer for 5-7 minutes, peeling off softened outer leaves as they loosen. Drain and let cool.

Trim the thick veins from the leaves for easier rolling.
2. Make the Filling:

In a bowl, mix the ground meat, rice, onion, garlic, egg, salt, pepper, paprika, and marjoram until combined.
3. Assemble the Rolls:

Place 1-2 tbsp of filling near the base of a cabbage leaf. Fold the sides inward, then roll tightly (like a burrito). Repeat.
4. Cook the Rolls:

In a large pot, layer sauerkraut, then place rolls seam-side down. Add bacon (if using).

Mix tomato sauce, water, paprika, bay leaf, and caraway seeds; pour over rolls.

Cover and simmer on low for 1.5–2 hours, until rice is tender.
5. Serve:

Ladle rolls and broth into bowls. Top with sour cream and herbs.
