Irish Sausage & Cabbage Stew

Ingredients

  • 6 pork sausages (Irish or bratwurst)
  • 1 tbsp olive oil
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 3 carrots, cut into large chunks
  • 3 cups green cabbage, chopped
  • 3 cups beef or chicken broth
  • 1/2 cup dark beer (optional, for depth of flavor)
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 2 bay leaves

Instructions

  1. Brown the sausages:
    • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sausages and cook until browned on all sides (about 5-7 minutes). Remove the sausages and set aside.
  2. Sauté the vegetables:
    • In the same pot, add the sliced onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant.
    • Add the carrots and cabbage, and cook for another 5 minutes, stirring occasionally.
  3. Deglaze and simmer:
    • Pour in the dark beer (if using) and scrape up any browned bits from the bottom of the pot. Let it simmer for 2-3 minutes to reduce slightly.
    • Add the beef or chicken broth, Worcestershire sauce, salt, black pepper, dried thyme, and bay leaves. Stir to combine.
  4. Cook the stew:
    • Return the browned sausages to the pot. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, or until the vegetables are tender and the sausages are cooked through.
  5. Serve:
    • Remove the bay leaves before serving. Ladle the stew into bowls and enjoy hot with crusty bread or mashed potatoes on the side.

Tips

  • Beer substitute: If you don’t have dark beer, you can use additional broth or a splash of red wine for extra flavor.
  • Add potatoes: For a heartier stew, add 2-3 diced potatoes along with the carrots.
  • Storage: This stew tastes even better the next day as the flavors meld. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
