Ingredients:

  • 2 cups cooked chicken (shredded or cubed)
  • 1 cup long-grain white rice (uncooked)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • Salt, to taste
  • Fresh basil or parsley (optional, for garnish)

Instructions:

  1. Preheat the oven: Set your oven to 375°F (190°C).
  2. Cook the rice: If you haven’t already, cook the rice according to package directions. Alternatively, you can use leftover rice.
  3. Prepare the casserole:
    • In a large mixing bowl, combine the cooked chicken, cooked rice, cream of chicken soup, drained diced tomatoes, chicken broth, Italian seasoning, garlic powder, black pepper, and a pinch of salt.
    • Stir everything together until it’s well mixed.
  4. Assemble the casserole: Transfer the mixture to a greased 9×13-inch baking dish and spread it out evenly.
  5. Top with cheese: Sprinkle both the mozzarella and Parmesan cheeses evenly over the top.
  6. Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes, until the casserole is heated through. Then, remove the foil and bake for an additional 10-15 minutes to allow the cheese to melt and become bubbly and golden.
  7. Garnish (optional): After baking, sprinkle with fresh basil or parsley for added color and flavor.
  8. Serve: Let the casserole cool for a few minutes before serving.

Tips:

  • Make it spicier: Add a pinch of red pepper flakes or a chopped jalapeño for some heat.
  • Add vegetables: Toss in some sautéed bell peppers, zucchini, or spinach to boost the veggie content.
  • Make it creamy: For a richer flavor, you can replace the cream of chicken soup with cream of mushroom soup or add a little sour cream or cream cheese to the mix.
