1 lb Italian sausage (mild or spicy, according to preference)
1 medium yellow onion, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
3 cloves garlic, minced
1/2 cup dry white wine
1 can (14.5 oz) diced tomatoes
1/4 cup chicken broth
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional, for heat)
Salt and pepper to taste
Fresh basil leaves, chopped (for garnish)
Freshly grated Parmesan cheese (for garnish)
Instructions:
Step 1: Cook the Noodles
Bring a large pot of salted water to a boil. Add the egg noodles or pappardelle and cook according to the package instructions until al dente. Drain and set aside.
Step 2: Prepare the Sausage and Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage, breaking it up with a spoon, and cook until browned and cooked through, about 6-8 minutes. Remove the sausage from the skillet and set aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and bell peppers, and cook until they begin to soften, about 5 minutes.
Add the minced garlic to the skillet and cook for another 1-2 minutes, until fragrant.
Step 3: Make the Sauce
Pour in the dry white wine, using a spoon to scrape up any browned bits from the bottom of the skillet. Allow the wine to simmer and reduce by half, about 2-3 minutes.
Add the diced tomatoes (with their juices), chicken broth, Italian seasoning, and red pepper flakes (if using). Stir to combine and let the mixture simmer for 10 minutes to allow the flavors to meld.
Step 4: Combine and Serve
Return the cooked sausage to the skillet, stirring to combine with the vegetables and sauce. Add the cooked noodles to the skillet, tossing gently to coat them in the sauce.
Season with salt and pepper to taste. Allow everything to cook together for another 2-3 minutes until heated through.
Garnish with chopped fresh basil leaves and freshly grated Parmesan cheese before serving.
