Italian Meatloaf Recipe

Ingredients:

  • 1 pound ground beef (or a mix of beef and pork)
  • 1 cup Italian bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped fresh parsley (or 2 tablespoons dried parsley)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 cup marinara sauce (plus extra for topping)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Optional: 1 cup shredded mozzarella cheese

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Mix Ingredients:
    • In a large bowl, combine the ground meat, bread crumbs, Parmesan cheese, parsley, onion, garlic, egg, marinara sauce, oregano, basil, salt, and pepper. Mix until just combined; avoid overmixing.
  3. Shape the Meatloaf:
    • Transfer the mixture to a baking dish or a lined loaf pan. Shape it into a loaf.
  4. Top with Sauce:
    • Spread a thin layer of marinara sauce over the top of the meatloaf. If using, sprinkle shredded mozzarella cheese on top.
  5. Bake:
    • Bake for about 1 hour, or until the internal temperature reaches 160°F (71°C).
  6. Rest and Serve:
    • Let the meatloaf rest for about 10 minutes before slicing. Serve with additional marinara sauce on the side.

Tips:

  • Feel free to add chopped bell peppers or mushrooms for extra veggies.
  • This meatloaf pairs well with garlic mashed potatoes or a simple salad.
