Italian Sausage with Bow Tie Pasta

Ingredients:

  • 12 oz (340g) bow tie pasta (farfalle)

  • 1 lb (450g) Italian sausage (sweet or spicy, casings removed if needed)

  • 1 tbsp olive oil

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 1 red bell pepper, diced

  • 1 (14.5 oz) can diced tomatoes (optional, for extra sauce)

  • ½ tsp red pepper flakes (optional, for heat)

  • 1 tsp Italian seasoning

  • ½ cup chicken broth (or pasta water)

  • ½ cup grated Parmesan cheese (+ extra for serving)

  • Salt & black pepper to taste

  • Fresh basil or parsley (for garnish)

Instructions:

  1. Cook the pasta: Boil bow tie pasta in salted water until al dente (about 10-12 mins). Reserve ½ cup pasta water, then drain and set aside.

  2. Brown the sausage: In a large skillet, heat olive oil over medium-high. Add sausage, breaking it into crumbles, and cook until browned (5-6 mins). Remove and set aside.

  3. Sauté veggies: In the same skillet, add onion and bell pepper. Cook 3-4 mins until softened. Add garlic and cook 30 seconds until fragrant.

  4. Combine everything: Return sausage to the skillet. Stir in diced tomatoes (if using), Italian seasoning, red pepper flakes, and chicken broth. Simmer 2-3 mins.

  5. Toss with pasta: Add cooked pasta and toss well. If needed, add reserved pasta water to loosen the sauce.

  6. Finish with cheese: Stir in Parmesan, then season with salt & pepper.

  7. Garnish & serve: Top with fresh basil or parsley and extra Parmesan.

Variations:

  • Creamy version: Stir in ½ cup heavy cream or marinara sauce.

  • Extra veggies: Add spinach, mushrooms, or zucchini.

  • Spicier kick: Use hot Italian sausage or extra red pepper flakes.
