Jalapeño Popper Cheesy Chicken Enchiladas with Creamy Sauce 🌶️🍗🧀

These Jalapeño Popper Cheesy Chicken Enchiladas are a spicy and creamy twist on traditional enchiladas! Packed with the bold flavors of jalapeños, cream cheese, and shredded chicken, they’re sure to be a hit at your next dinner gathering.


Ingredients:

For the Enchilada Filling:

  • 2 cups cooked, shredded chicken
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • ½ cup diced jalapeños (fresh or pickled)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon cumin
  • ¼ teaspoon salt

For the Enchilada Sauce:

  • 1 can (10 oz) enchilada sauce (red or green)
  • 1 cup sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin

For Assembling:

  • 8 flour tortillas (medium-sized)
  • 1 cup shredded cheese (cheddar or Mexican blend, for topping)

Instructions:

  1. Prepare the Filling:

    • In a large bowl, mix together the shredded chicken, cream cheese, shredded cheddar cheese, diced jalapeños, garlic powder, onion powder, cumin, and salt. Stir until everything is evenly combined. Set aside.
  2. Make the Creamy Enchilada Sauce:

    • In a small bowl, whisk together the enchilada sauce, sour cream, lime juice, chili powder, and cumin. Mix well until smooth and creamy. Taste and adjust seasoning if needed.
  3. Assemble the Enchiladas:

    • Preheat your oven to 375°F (190°C).
    • Spread a thin layer of the creamy enchilada sauce on the bottom of a 9×13-inch baking dish.
    • Take each tortilla and spoon a generous amount of the chicken mixture into the center. Roll up the tortilla tightly around the filling and place it seam-side down in the baking dish. Repeat with all the tortillas.
  4. Top and Bake:

    • Pour the remaining creamy enchilada sauce over the top of the rolled enchiladas, covering them evenly.
    • Sprinkle the shredded cheese over the top.
    • Bake for 20-25 minutes, or until the cheese is melted and bubbly, and the enchiladas are heated through.
  5. Serve:

    • Let the enchiladas cool for a few minutes before serving.
    • Optional: Garnish with chopped cilantro, a squeeze of lime, or sliced jalapeños for extra flavor and decoration.
