Jalapeño Popper Pinwheels

Ingredients:

  • 8 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard (optional for a slight tang)
  • 2-3 fresh jalapeños, seeds removed and finely chopped (adjust to your spice preference)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • 4 large flour tortillas
  • 1/2 cup cooked and crumbled bacon (optional for extra flavor)
  • 1/4 cup green onions, chopped (optional for garnish)

Instructions:

1. Make the Cream Cheese Filling:
  • In a medium bowl, mix together the softened cream cheese, shredded cheddar cheese, mayonnaise, Dijon mustard (if using), garlic powder, onion powder, salt, and pepper until smooth and well combined.
  • Stir in the chopped jalapeños (and crumbled bacon, if using) until evenly distributed.
2. Assemble the Pinwheels:
  • Lay a flour tortilla flat on a clean surface.
  • Spread a generous amount of the cream cheese filling over the entire tortilla, leaving a small border around the edges.
  • Roll the tortilla up tightly, starting from one edge to form a log shape.
3. Slice the Pinwheels:
  • Using a sharp knife, slice the rolled-up tortilla into 1-inch wide pinwheels.
  • Arrange the pinwheels on a serving platter.
4. Serve:
  • If desired, sprinkle the pinwheels with chopped green onions for extra flavor and a pop of color.
  • Serve immediately or refrigerate for up to 2 hours before serving for easier slicing.

Tips:

  • Spice Level: Adjust the number of jalapeños depending on how spicy you like your pinwheels. For a milder version, you can remove the seeds and ribs of the jalapeños.
  • Make Ahead: You can prepare the pinwheels a few hours ahead of time and store them in the fridge. Just slice them right before serving for the freshest bite.
