Jalapeño Popper Stuffed Mushrooms are a delicious appetizer that combines the creamy, spicy flavors of jalapeño poppers with the earthy, savory taste of mushrooms. Here’s a simple and tasty recipe to make them:

Ingredients:

  • 12 large white or cremini mushrooms (about 12)
  • 4 oz cream cheese, softened
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 1-2 jalapeños, finely chopped (seeds removed for less heat)
  • 1-2 tablespoons green onions or chives, finely chopped (optional)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup cooked and crumbled bacon (optional, for extra flavor)
  • 1/2 cup panko breadcrumbs (for topping)
  • Olive oil or melted butter (for greasing the baking dish)

Instructions:

  1. Prepare the Mushrooms:
    • Preheat the oven to 375°F (190°C).
    • Clean the mushrooms by wiping them with a damp paper towel (avoid rinsing them with water).
    • Carefully remove the stems from the mushrooms and set aside. You can chop the stems and add them to the filling if desired, or discard them.
    • Arrange the mushroom caps on a baking sheet or in a greased baking dish, cavity side up.
  2. Make the Filling:
    • In a mixing bowl, combine the softened cream cheese, cheddar cheese, mozzarella cheese, chopped jalapeños, green onions (if using), garlic powder, onion powder, and salt and pepper.
    • Stir in the cooked bacon, if using. Mix until all ingredients are well combined. The filling should be creamy and thick.
  3. Stuff the Mushrooms:
    • Spoon the cheese and jalapeño mixture into each mushroom cap, pressing gently to pack it in.
  4. Add the Topping:
    • Sprinkle panko breadcrumbs over the top of each stuffed mushroom for added crunch. You can also drizzle a little olive oil or melted butter over the breadcrumbs to help them brown.
  5. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden and bubbly.
  6. Serve:
    • Remove from the oven and let cool for a few minutes before serving. Optionally, garnish with extra chopped green onions or fresh cilantro.

Tips:

  • For extra heat: Leave some jalapeño seeds in the filling, or use a spicier variety like serrano peppers.
  • Bacon substitution: If you’re looking for a vegetarian version, you can leave out the bacon or swap it with crispy fried onions.
  • Make ahead: You can assemble the stuffed mushrooms in advance and refrigerate them for a few hours or overnight. Bake them just before serving.
