Ingredients:
- 1/2 cup soy sauce
- 1/4 cup apple cider vinegar
- 2 tbsp olive oil
- 2 tbsp brown sugar
- 1 tbsp Worcestershire sauce

- 2 tsp allspice (pimento)
- 1 tsp cinnamon
- 1/2 tsp nutmeg (optional, for extra warmth)
- 1-2 Scotch bonnet peppers (or jalapeños, depending on your heat preference)
- 2-3 garlic cloves, minced
- 1 small onion, chopped
- 1 tbsp fresh thyme (optional)
Instructions:
1. Prepare the Ingredients:
- If using Scotch bonnet peppers, be careful when handling them—wear gloves to avoid irritation. Remove the seeds if you want a milder sauce, or leave them in for extra heat. Chop the peppers into small pieces.
- Mince the garlic and chop the onion finely.
- If you’re using fresh thyme, strip the leaves off the stems and chop them.
2. Blend the Sauce:
- In a blender or food processor, combine the soy sauce, apple cider vinegar, olive oil, brown sugar, Worcestershire sauce, and lime juice.
- Add the allspice, cinnamon, nutmeg (if using), Scotch bonnet peppers, garlic, onion, and fresh thyme (if using).
- Blend the ingredients until smooth. If the sauce is too thick, add a splash of water to achieve your desired consistency.
3. Taste and Adjust:
- Taste the sauce and adjust the seasonings as needed. You can add more brown sugar for sweetness, lime juice for tanginess, or more Scotch bonnet peppers for additional heat.
