Jerk Chicken Recipe

Ingredients

For the Marinade:

  • 1/2 cup soy sauce
  • 1/4 cup vegetable oil
  • 1/4 cup apple cider vinegar
  • 2-3 tablespoons brown sugar
  • 1-2 Scotch bonnet peppers (or habanero), seeds removed for less heat
  • 1 onion, roughly chopped
  • 4-6 cloves garlic
  • 2 tablespoons fresh thyme (or 1 tablespoon dried)
  • 1 tablespoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • Juice of 1 lime

For the Chicken:

  • 4-6 bone-in, skin-on chicken pieces (legs, thighs, or breasts)

Instructions

  1. Make the Marinade:
    • In a blender or food processor, combine all marinade ingredients. Blend until smooth.
  2. Marinate the Chicken:
    • Place the chicken pieces in a large resealable plastic bag or a bowl. Pour the marinade over the chicken, ensuring it’s well coated. Seal the bag or cover the bowl and refrigerate for at least 4 hours, preferably overnight.
  3. Prepare for Cooking:
    • Preheat your grill to medium-high heat. If using a charcoal grill, set up for indirect heat.
  4. Grill the Chicken:
    • Remove the chicken from the marinade and shake off excess. Grill the chicken skin-side down for about 10-15 minutes until well browned. Flip and move to indirect heat, cooking for another 20-30 minutes, or until the internal temperature reaches 165°F (75°C).
  5. Serve:
    • Allow the chicken to rest for a few minutes before serving. Enjoy with traditional sides like rice and peas, fried plantains, or a fresh salad.
