Jerk Lemon Pepper Salmon

Ingredients:

  • 4 salmon fillets (about 6 oz each)
  • 2 tablespoons jerk seasoning (store-bought or homemade)
  • 1 tablespoon olive oil
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)
  • Lemon wedges for serving

Instructions:

  1. Marinate the Salmon:
    • In a bowl, mix together the jerk seasoning, olive oil, lemon juice, and lemon zest.
    • Place the salmon fillets in a shallow dish and pour the marinade over them, making sure they are well coated. Let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator).
  2. Preheat the Grill or Oven:
    • If grilling, preheat your grill to medium-high heat. If baking, preheat your oven to 400°F (200°C).
  3. Cook the Salmon:
    • Grilling: Place the marinated salmon on the grill, skin side down. Grill for about 4-6 minutes per side, or until the salmon flakes easily with a fork.
    • Baking: Place the salmon on a lined baking sheet, skin side down. Bake for about 12-15 minutes, or until the salmon is cooked through.
  4. Serve:
    • Once cooked, remove the salmon from the grill or oven. Season with additional salt and pepper if desired.
    • Garnish with fresh cilantro or parsley, and serve with lemon wedges.

Tips:

  • Side Dishes: This salmon pairs well with rice, quinoa, roasted vegetables, or a fresh salad.
  • Homemade Jerk Seasoning: If you’d like to make your own jerk seasoning, combine spices like allspice, thyme, cinnamon, nutmeg, garlic powder, onion powder, cayenne pepper, and black pepper.
