Jiffy Corn Casserole Recipe

Ingredients:

  • 1 box Jiffy Corn Muffin Mix
  • 1 can (15 oz) whole corn, drained
  • 1 can (15 oz) creamed corn
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 cup shredded cheddar cheese (optional)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper (adjust to taste)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Mix Ingredients:
    • In a large mixing bowl, combine the Jiffy Corn Muffin Mix, whole corn, creamed corn, sour cream, melted butter, and optional cheddar cheese. Stir until well combined.
  3. Season:
    • Add salt and pepper to taste, mixing thoroughly.
  4. Prepare Baking Dish:
    • Grease a 9×9-inch (or similar size) baking dish with cooking spray or butter.
  5. Pour and Spread:
    • Pour the corn mixture into the prepared baking dish and spread it evenly.
  6. Bake:
    • Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the casserole is set in the center.
  7. Cool and Serve:
