Keto Buffalo Chicken Taquitos

Ingredients:

For the Filling:

  • 2 cups cooked chicken breast, shredded (or rotisserie chicken)
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup buffalo sauce (adjust to your spice preference)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon chopped green onions (optional)

For the Taquitos:

  • 8-10 keto tortillas (store-bought or homemade)
  • Olive oil or avocado oil (for spraying or brushing)

Instructions:

1. Prepare the Filling:

  • In a medium bowl, combine the shredded chicken, cream cheese, mozzarella cheese, buffalo sauce, garlic powder, onion powder, salt, and pepper.
  • Mix everything together until fully combined and creamy. If you like a bit of extra heat, add more buffalo sauce to taste.

2. Preheat the Oven:

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

3. Assemble the Taquitos:

  • Warm the keto tortillas slightly to make them easier to roll. You can microwave them for 10-15 seconds or heat them in a dry pan for a few seconds on each side.
  • Place about 2 tablespoons of the buffalo chicken filling along the center of each tortilla.
  • Roll up each tortilla tightly around the filling, securing it in a taquito shape.

4. Bake the Taquitos:

  • Place the rolled-up taquitos seam side down on the prepared baking sheet.
  • Lightly spray the tops of the taquitos with olive oil or avocado oil.
  • Bake for 15-20 minutes, or until the taquitos are golden brown and crispy.

5. Serve:

  • Remove from the oven and let them cool for a minute.
  • Serve with your favorite dipping sauces, such as ranch dressing, blue cheese dressing, or extra buffalo sauce.

Tips:

  • Make-Ahead Option: You can prepare the filling and store it in the fridge for a few days ahead of time. Assemble and bake the taquitos when you’re ready.
  • Crispier Taquitos: For extra crispiness, you can also air-fry the taquitos at 375°F (190°C) for about 10-12 minutes, shaking the basket halfway through.
  • Customize: You can add other ingredients to the filling like diced celery, shredded cheddar cheese, or a bit of chopped bacon for extra flavor.
