Keto Cauliflower Crust Pizza

Ingredients *(Makes 1 medium pizza, 6-8 slices)*
For the Crust:

1 cup (100g) shredded mozzarella cheese

Instructions
1. Prepare the Cauliflower Rice

Rice the cauliflower: Cut into florets, pulse in a food processor until fine (or grate with a box grater).

Cook & drain: Microwave riced cauliflower for 5 mins (or steam), then let cool. Wrap in a clean kitchen towel and squeeze out ALL excess water (this is key for crispiness!).
2. Make the Dough

In a bowl, mix drained cauliflower, egg, mozzarella, Parmesan, and seasonings until a dough forms.

Line a baking sheet with parchment paper. Press the dough into a ¼-inch thick circle (or rectangle).

3. Add Toppings & Broil
