Keto Cauliflower Crust Pizza

Low-carb, crispy, and delicious—this cauliflower crust holds its shape and satisfies pizza cravings without the guilt!


Ingredients *(Makes 1 medium pizza, 6-8 slices)*

For the Crust:

  • 1 medium cauliflower head (or 4 cups riced cauliflower, ~500g)

  • 1 large egg, beaten

  • 1 cup (100g) shredded mozzarella cheese

  • ¼ cup (25g) grated Parmesan cheese

  • 1 tsp Italian seasoning

  • ½ tsp garlic powder

  • ½ tsp salt

  • ¼ tsp black pepper

For Toppings:

  • ½ cup sugar-free pizza sauce (or marinara)

  • 1 cup (100g) shredded mozzarella cheese

  • Pepperoni slices, olives, mushrooms, bell peppers, etc.

  • Fresh basil leaves (optional)

  • Red pepper flakes (for heat)


Instructions

1. Prepare the Cauliflower Rice

  1. Rice the cauliflower: Cut into florets, pulse in a food processor until fine (or grate with a box grater).

  2. Cook & drain: Microwave riced cauliflower for 5 mins (or steam), then let cool. Wrap in a clean kitchen towel and squeeze out ALL excess water (this is key for crispiness!).

2. Make the Dough

  1. In a bowl, mix drained cauliflower, egg, mozzarella, Parmesan, and seasonings until a dough forms.

  2. Line a baking sheet with parchment paper. Press the dough into a ¼-inch thick circle (or rectangle).

  3. Bake at 425°F (220°C) for 15-20 mins until golden and firm.

3. Add Toppings & Broil

  1. Spread sauce, sprinkle cheese, and add toppings.

  2. Broil for 3-5 mins until cheese melts (watch closely!).


Tips for Success

✔ Squeeze ALL water out—or the crust will be soggy!
✔ Pre-bake the crust—this prevents a mushy middle.
✔ Use parchment paper—prevents sticking.
