Keto Cheeseburger Egg Rolls are a fun and delicious low-carb alternative to traditional egg rolls. Here’s a simple recipe to make them:

Ingredients:

  • 1 lb ground beef (or ground turkey)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped onions (optional)
  • 2 tbsp sugar-free ketchup
  • 1 tbsp mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1 pack of keto-friendly egg roll wrappers (usually made with almond flour or other low-carb ingredients, available at many grocery stores or online)
  • Olive oil or avocado oil for frying

Instructions:

  1. Cook the Beef:

    • Heat a skillet over medium heat and add the ground beef. Cook until browned, breaking it up into small pieces as it cooks. Drain excess fat if needed.
  2. Add Seasonings:

    • To the cooked beef, add the chopped onions (if using), garlic powder, onion powder, salt, pepper, ketchup, and mustard. Stir well and cook for another 2-3 minutes until everything is combined and heated through.
  3. Add Cheese:

    • Remove the skillet from the heat and stir in the shredded cheddar cheese. Let the residual heat melt the cheese into the beef mixture.
  4. Prepare the Egg Roll Wrappers:

    • Lay an egg roll wrapper flat on a clean surface. Spoon about 2-3 tablespoons of the cheeseburger mixture in the center of the wrapper.
  5. Roll the Egg Rolls:

    • Fold in the sides of the egg roll wrapper and then roll it tightly, sealing the edge with a little water to keep it closed.
  6. Fry the Egg Rolls:

    • Heat oil in a deep pan or fryer over medium-high heat. Once hot, gently place the egg rolls in the oil and fry until golden brown and crispy, about 3-4 minutes per side.
    • Remove and drain on paper towels to absorb excess oil.
  7. Serve:

    • Serve your keto cheeseburger egg rolls with extra sugar-free ketchup or mustard for dipping!

Tips:

  • You can also bake these at 400°F (200°C) for about 12-15 minutes, flipping halfway through if you prefer a lower-fat version.
  • If you can’t find keto egg roll wrappers, you can also use slices of cheese as a “wrapper” by melting and crisping them in a pan, then folding them around the beef mixture.
