Keto Chicken Broccoli Casserole Bake with Cheese �🧀

This ultra-creamy, low-carb casserole is packed with tender chicken, broccoli, and a rich cheese sauce—perfect for meal prep or a cozy weeknight dinner!


Ingredients

  • 2 cups cooked chicken, shredded (rotisserie works great!)

  • 2 cups broccoli florets, steamed (or blanched)

  • 1 cup shredded cheddar cheese

  • 1 cup heavy cream

  • ½ cup cream cheese, softened

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp paprika

  • Salt & pepper to taste

  • Optional toppings:

    • ¼ cup grated Parmesan

    • 2 tbsp crispy bacon bits

    • 1 tbsp fresh parsley, chopped


Instructions

  1. Prep the oven & dish:

    • Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish.

  2. Make the cheese sauce:

    • In a saucepan over medium heat, whisk heavy cream and cream cheese until smooth.

    • Stir in cheddar cheese, garlic powder, onion powder, paprika, salt, and pepper. Cook until melted (2–3 mins).

  3. Layer the casserole:

    • In the baking dish, mix chicken and broccoli. Pour cheese sauce evenly over the top.

    • Sprinkle with Parmesan or bacon (if using).

  4. Bake & broil:

    • Bake 20–25 mins until bubbly.

    • Broil 2–3 mins for a golden top (watch closely!).

  5. Serve hot!

    • Garnish with fresh parsley and extra black pepper.


Tips & Variations

  • Lower calories? Swap heavy cream for half-and-half (add 1 tsp xanthan gum to thicken).

  • Veggie swaps: Try cauliflower or zucchini instead of broccoli.

  • Spice it up: Add diced jalapeños or a dash of hot sauce.

  • Freezer-friendly: Assemble (unbaked) and freeze for up to 1 month. Thaw before baking.
