Keto Gluten-Free Cheese Crackers 🧀✨

These crispy, cheesy crackers are low-carb, keto-friendly, and packed with flavor—perfect for snacking, dipping, or pairing with charcuterie!

Ingredients

  • 1 ¼ cups blanched almond flour (plus extra for dusting)

  • ½ cup shredded sharp cheddar cheese

  • ¼ cup grated Parmesan cheese

  • 1 tbsp olive oil

  • 1 large egg

  • ⅛ tsp garlic powder

  • ¼ tsp onion powder

  • ¼ tsp smoked paprika (or regular paprika)

  • ⅛ tsp salt

  • Black pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Mix dough: In a bowl, combine almond flour, cheddar, Parmesan, garlic powder, onion powder, smoked paprika, salt, and pepper.

  3. Add wet ingredients: Stir in olive oil and egg until a thick dough forms (use hands if needed).

  4. Roll out: Place dough between two sheets of parchment paper dusted with almond flour. Roll to ⅛-inch thickness.

  5. Cut shapes: Use a pizza cutter or knife to slice into 1-inch squares, or use a small cookie cutter for fun shapes.

  6. Bake: Transfer to the baking sheet and bake 12–15 minutes until golden and crisp.

  7. Cool: Let cool completely—they’ll crisp up further as they cool!

Tips & Variations

  • Extra crisp: Bake an extra 2–3 minutes if needed (watch closely!).

  • Spicy kick: Add ¼ tsp cayenne or a pinch of red pepper flakes.

  • Dairy-free: Swap cheeses for nutritional yeast + dairy-free cheese.

  • Storage: Keep in an airtight container for up to 1 week (or freeze).
