Keto Strawberry Mousse

Preparation Time:

Ingredients:

  • 1 cup fresh strawberries, hulled and chopped
  • 1/4 cup powdered erythritol or your preferred keto-friendly sweetener
  • 1 tsp. lemon juice
  • 1 cup heavy whipping cream
  • 1 tsp. vanilla extract
  • Additional strawberries and mint leaves for garnish (optional)

Instructions:

  1. Prepare the Strawberry Puree:
    • In a blender or food processor, combine the chopped strawberries, powdered erythritol, and lemon juice.
    • Blend until smooth. Taste and adjust sweetness if needed.
    • Set aside.
  2. Whip the Cream:
    • In a large mixing bowl, add the heavy whipping cream and vanilla extract.
    • Using an electric mixer, beat the cream on medium-high speed until stiff peaks form.
  3. Combine and Chill:
    • Gently fold the strawberry puree into the whipped cream until fully combined.
    • Divide the mixture into serving glasses or bowls.
    • Refrigerate for at least 1 hour to allow the mousse to set.
  4. Serve:
    • Garnish with additional strawberries and mint leaves, if desired.
    • Serve chilled.
