Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs (about 12 graham crackers)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • A pinch of salt (optional)

For the filling:

  • 3/4 cup key lime juice (fresh or bottled)
  • 1 can (14 ounces) sweetened condensed milk
  • 3 large egg yolks (be sure to separate the whites for another use)
  • 1 teaspoon lime zest (optional, for extra flavor)

For the topping (optional):

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Crust:

    • Preheat your oven to 350°F (175°C).
    • In a bowl, combine the graham cracker crumbs, sugar, melted butter, and a pinch of salt (if using). Mix until everything is well combined and the crumbs are evenly coated in butter.
    • Press the mixture into the bottom and up the sides of a 9-inch pie dish to form a crust. You can use the back of a spoon or a glass to press it down firmly.
    • Bake the crust in the preheated oven for about 8-10 minutes, or until it’s golden brown. Remove it from the oven and let it cool while you make the filling.
  2. Make the Filling:

    • In a medium bowl, whisk together the sweetened condensed milk, key lime juice, and egg yolks until smooth and fully combined. If you’re using lime zest, add it to the mixture.
    • Pour the filling into the cooled graham cracker crust, spreading it evenly.
  3. Bake the Pie:

    • Bake the pie at 350°F (175°C) for about 10-15 minutes, or until the filling is set and just slightly jiggly in the center. It should not be completely liquid.
    • Remove the pie from the oven and let it cool to room temperature. Afterward, refrigerate it for at least 3 hours (preferably overnight) to let the filling firm up and chill.
  4. Make the Whipped Cream Topping (optional):

    • In a mixing bowl, beat the heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form.
    • Once the pie is chilled, spread the whipped cream on top or pipe it on with a pastry bag for a decorative touch.
  5. Serve:

    • Slice the pie, serve, and enjoy this creamy, tangy treat!

The combination of tart key lime flavor and the sweet, creamy filling is a perfect balance. The buttery graham cracker crust gives it a nice crunch, and the whipped cream topping is a refreshing finish. Enjoy!
