Korean BBQ Beef Rice Stack

Ingredients:

For the Korean BBQ Beef:

  • 1 lb beef sirloin or ribeye, thinly sliced

  • ¼ cup soy sauce

  • 2 tbsp brown sugar

  • 2 tbsp sesame oil

  • 3 cloves garlic, minced

  • 1 tsp grated ginger

  • 1 tbsp rice vinegar

For the Rice Stack:

  • 2 cups cooked short-grain rice (sushi rice works great)

  • 1 tbsp rice vinegar + ½ tsp sugar (optional, for seasoning rice)

  • 1 cup shredded lettuce or spinach

  • 1 carrot, julienned or spiralized

  • ½ cucumber, thinly sliced

  • 2 fried or soft-boiled eggs (optional)

  • 1 tbsp toasted sesame seeds

  • 2 green onions, thinly sliced

  • Optional drizzle: Gochujang mayo (mix 1 tbsp mayo + 1 tsp gochujang)

Instructions:

1️⃣ Marinate the Beef:

  • In a bowl, whisk together soy sauce, brown sugar, sesame oil, garlic, ginger, and rice vinegar.

  • Add the sliced beef and marinate for at least 30 minutes (or up to 2 hours for deeper flavor).

2️⃣ Cook the Beef:

  • Heat a skillet or wok over high heat.

  • Add the beef (reserving excess marinade) and cook for 2-3 minutes until caramelized.

  • Pour in the remaining marinade and simmer for 1-2 minutes until slightly thickened. Remove from heat.

3️⃣ Assemble the Rice Stacks:

  • Optional: Season warm rice with a mix of rice vinegar and sugar for extra flavor.

  • In a bowl or round mold (like a small ramekin), layer:

    • 1st Layer: Fluffy rice (lightly pressed)

    • 2nd Layer: Shredded lettuce or spinach

    • 3rd Layer: Korean BBQ beef

    • 4th Layer: Julienned carrots & cucumber

  • Carefully flip onto a plate to create a neat stack.

4️⃣ Garnish & Serve:

  • Top with a fried egg (if using), sesame seeds, and green onions.

  • Drizzle with gochujang mayo or extra Korean BBQ sauce.

Serving Suggestion:

  • Great with kimchi or a side of miso soup!

  • For extra crunch, add crispy fried onions or nori strips.
